This is Bimber's Air, the third installment of their Four Elements Quartet, inspired by the very atmosphere that nurtures the growth of the single farm barley used in its creation. On the palate, it unfolds with a rich, syrupy texture, unveiling a harmonious blend of scorched lemon peels, cooking apples, peach melba, caramelized sugars, and a piquant cask spice. The finish lingers with candied peels and lasting notes of ginger and cinnamon, leaving a trail of warmth and delight. Bottled at a robust 58.9% ABV from a single bourbon cask (#275), this 257-bottle release is a testament to Bimber's dedication to capturing the essence of nature in liquid form.
