Dingle's Wheel of the Years Series takes us on a captivating journey with its sixth addition, Cónocht an Earraigh, a tribute to the ancient celebration of the spring equinox. This triple distilled Irish whiskey, initially matured in bourbon casks, undergoes a stunning transformation with a finish in Cabernet Sauvignon wine casks. The nose tantalizes with notes of hedgerow berries, juicy dark plums, burnt brown sugar, and toasted marzipan. The palate unveils a rich tapestry of flavors, including dark treacle toffee, jammy red fruit pastries, softly sweet baking spice, charred oak, and gingerbread. The finish lingers sweetly, showcasing rich vinous fruit and leathery oak notes. As the night and day align, and the pastures begin to flourish, Dingle's master distiller meticulously assesses the casks, crafting a whiskey that captures the essence of spring's renewal.
