The Hazelburn Sauternes represents an innovative approach to whisky maturation from Springbank's unpeated line. Distilled in June 2002, this expression underwent an intriguing dual maturation process - first spending 5 years in refill bourbon casks before being transferred to Sauternes wine casks for an uncommonly long three-year finish, resulting in an 8-year-old whisky bottled in February 2011. This substantial finishing period in sweet wine casks demonstrates Springbank's willingness to push boundaries while maintaining their traditional methods, as evidenced by the natural cask strength bottling and absence of chill filtration.
