However, the true magic happens when the whiskey undergoes a secondary maturation in casks that previously held St. George's homemade umeshu, a Japanese-style plum liqueur made from California-grown ume fruit. This process infuses the whiskey with delightful tropical fruit flavors, reminiscent of juicy mangoes and syrupy sweetness. On the nose, fresh citrus aromas mingle with grapefruit peel and white grape wine-y undertones, accompanied by hints of apple skin and dried mango.
